Raw Apple Cinnamon Pecan Pancakes

Jesse and I had this for breakfast for Valentine's Day (well, technically Saturday, not Sunday...) and it was absolutely delicious! So here is the recipe just in case you want your mind blown by this amazing dish as well...

Raw Apple Cinnamon Pecan Pancakes with a berry compote



This yummy breakfast is a raw vegan dish! Enjoy!

ingredients:
2 granny smith apples, chopped
2 cup golden flax, ground
1 cup nutritional yeast
2 tablespoon cinnamon
juice of 1 lemon
2 cup filtered water
1 teaspoon sea salt
1 cup unsweetened shredded dried coconut
1 cup pecan nuts, finely chopped

berry compote:
1 pint strawberries
1 bag frozen blackberries
1/4 cup agave nectar
2 teaspoons sea salt


prep:
combine the yeast, the flax, sea salt and coconut in a bowl, set aside. in your food processor, put the apples, the cinnamon and lemon juice and process until well blended. add the dry mixture and process until well blended.

stir in the pecans and add water until you get a creamy consistency

take a spatula and spread the mixture on wax paper, dehydrate at 105 for an hour.

while the "pancakes" are dehydrating, make your berry compote.

we used frozen blackberries and fresh strawberries. poured the blackberries into a bowl with chopped up stawberries (1 pint). add about 2 teaspoons of sea salt and 1/4 cup agave nectar. stir well and allow to marinate while pancakes are dehydrating (you can even make this the night before and allow your berries to marinate overnight)

when pancakes are finished dehydrating, you can cut into whatever shape you prefer (we chose hearts for valentine's day, add bananas and your berry compote and ENJOY!!
