Jesse & Janackeh's Spaghetti Squash with Homemade Sauce


* a vegetarian recipe


1 spaghetti squash
1 onion
1 green pepper
1 can diced tomatoes
1 can tomato sauce
basil
oregano
galic powder
onion powder
red pepper flakes
parsley
olive oil
Morningstar Farms veggie crumbles


take a spaghetti squash (you can get them at the farmers market or kroger), cut it in half and drizzle some olive oil on the open halves. bake for 30 minutes at 475.

while it is baking, start your sauce.

Saute onion and green pepper in a large skillet with a little olive oil until onions are translucent. Next, add your veggie meat and add about 3 tbsp water to the pan. After meat starts defrosting, add your spices. Garlic powder, onion powder, oregano and basil. Also add red pepper flakes and parsley if you like it. When the meat is absorbing the water and "plumping" up, it's going to draw in those spices as well. flavoring your 'meat' a lot better.

Next, take your can of diced tomatoes and 1 can of sauce add to it.. let it boil for about 3 minutes and then set to simmer, add more garlic and onion powder.. taste it make sure there's enough oregano and basil.

When the squash is done, take it out of the oven and take a fork and begin to scrape the insides out, making "spaghetti" noodles.
