food goodness!!!

Jesse, my amazingly talented artistic chef of a boyfriend created some amazing dishes this weekend...here's a rundown:



Stuffed Green & Poblano Peppers...these were absolutely delicious!! Roasted and stuffed with quinoa, onions, veggie meat, tomatoes...

filling for the roasted eggplant: squash, zucchini, mushrooms, carrots, tomatoes, onion, garlic, eggplant, artichoke hearts
