Peanut Butter Coconut Balls
1 bag unsweetened coconut
natural peanut butter
pure vanilla extract
optional: cacao (unsweetened chocolate)
next, if you choose to do the cacao, heat it (in 30 second intervals, stirring between...) and sweeten it with honey or agave
next, mix in coconut to the peanut butter mixture. form into balls and place on wax paper on a cookie sheet. you can dip the balls into the chocolate and then bake them for 7-10 minutes on 300 to toast the coconut OR simple stick the cookie sheet in the freezer for about 20 minutes or until set...then, ENJOY!!!
