Peanut Butter Coconut Balls

Saturday night i tried out a new dessert that was literally inspired by Holy Spirit and it was a hit...Jesse loved them and they were RoJen approved as well! LOL (our best friends Rolanda and Jennifer...)

Peanut Butter Coconut Balls

1 bag unsweetened coconut
natural peanut butter
raw honey
pure vanilla extract
optional: cacao (unsweetened chocolate)



first, mix natural peanut butter with honey and vanilla extract. i don't really measure, just eyeball it and taste as you go...



next, if you choose to do the cacao, heat it (in 30 second intervals, stirring between...) and sweeten it with honey or agave



next, mix in coconut to the peanut butter mixture. form into balls and place on wax paper on a cookie sheet. you can dip the balls into the chocolate and then bake them for 7-10 minutes on 300 to toast the coconut OR simple stick the cookie sheet in the freezer for about 20 minutes or until set...then, ENJOY!!!
