Raw German Chocolate Brownies!

a couple of weekends ago, we attempted not only a raw brownie, but a raw brownie with raw german chocolate topping! it was amazing! we took the recipe here for raw german chcolate cake and modified it for the topping, while using this recipe for raw vegan brownies and marrying the two...try them!! they are delish!

Raw German Chocolate Brownies

The raw brownie was made with a simple mix of walnuts, dates, golden raisins and cocoa.



for the topping we took walnuts, honey, vanilla extract and sea salt and processed until it made a smooth paste.


next we added unsweetened coconut flakes =)




and after letting set in the fridge for a few hours, we had a very yum german chocolate raw walnut brownie...

Raw Fruit Cobblers

since peaches and blackberries are in season, we took advantage of the awesome produce sales and stocked up and made raw peach cobbler and raw blackberry cobbler.

For the peach cobbler, i pitted and sliced the peaches with the help of my expert peach pitter boyfriend Jesse =)...he's so good at it! me, not really...anyway, then i processed the peaches with cinnamon and a bit of honey





next, for the crust and crumble, we combined walnuts, cinnamon, dates and golden raisins and processed them until crumbly, setting half of the mix aside for the top crumble of the cobbler...






after the crust and peach filling were completed, we worked on the blackberry filling, which was pretty much just like the peach filling: blackberries, cinnamon and honey processed until semi smooth, then poured into the crust...





the final product was very yummy and satisfying =)



*we also made a "cashew creme" on the side--kinda like a raw whipped cream or ice cream you would have with a traditional cobbler...

Raw Strawberry Shortcake

Since berry season is in full swing and strawberries are on sale everywhere you turn, Jesse and I stocked up on strawberries this weekend and made an old favorite: strawberry shortcake! We made a yum raw vegan version that definitely rivals the original!

Raw Strawberry Shortcake

ingredients:

2 lbs fresh strawberries
6 or 7 pitted dates
1/2 cup cashews
1/2 cup almonds
1/2 cup pecans or walnuts
2 tablespoons honey, divided
2 tablespoons olive oil
1 teaspoon sea salt


first, we took the nuts and processed them with 1 tablespoon sea salt.



we added the "cashew cream" that we used for the raw key lime pie .






then, we processed dates and added them to the nut mixture...




next, we added about 6 chopped strawberries to the "shortcake" mix and 1 tablespoon honey





then, we started on the sauce by blending about 10 strawberries by themselves and setting aside



then, we processed about 15 to 20 strawberries with 2 tablespoon olive oil, 1 tablespoon honey and a pinch of sea salt.



we added the processed strawberries that we set aside earlier to the sauce and mixed them in



finally, we built our dessert starting with the shortcake, forming into patties and placing first in the bowl



then we layered on chopped strawberries and strawberry sauce, then repeated the process, making 2 layers



and here's the final yumminess!!

Raw Cheezecake!

yep! you read that right...i made raw vegan cheezecake this weekend and i LOVED IT!!! Seriously--i told Jesse this was by far my favorite of all of the yummy raw and vegan desserts we have made so far!!! YUMMMM!!!! you must try it!! so easy!!


Raw Cheezecake

First, i worked on the crust...walnuts, raisins and a bit of cocoa to make a chocolate crust

CHEEZECAKE FILLING

first i processed bananas and cashews...



and added lemon juice and zest





time to pour into the crust!




after this, i froze the cake for a couple hours then allowed it to thaw a little in the fridge for another hour or so...before enjoying, i made the topping...

TOPPING

SO easy...simply chop up some fresh strawberries



and process!




...the cheezecake...




this was a wonderful cheezecake...it is very nutty and lemony but it totally did it for me! and the cold smoothness of the cheezecake mixed with the strawberry topping and chocolate crust...so yum.

im excited about the variations of this recipe i can make...blueberry swirl cheezecake...chocolate cheezecake...etc....

Raw Key Lime Pie

so last week i was searching online for better raw ice cream recipes than the ones i have found and i came across thispost on a forum board. in the comments, someone posted a recipe for Raw Key Lime Pie and since it is one of Jesse's favorites, i thought "why not give it a shot?"...

Raw Key Lime Pie



this pie was so fun to make...

the crust:
so simple...unsweetened coconut, dates and walnuts





i pressed it into the glass pie dish...

main ingredient?



AND

of course! lol



i processed the avocados with fresh key lime juice and agave



also zested some key lime for added taste...



next, i poured the key lime "mousse" into the crust...



gorgeous pie!!





next, i made a cashew "cream" to garnish the top...
soaked cashews, vanilla extract, water, honey



next, i piped it onto the pie with my icing bag (that i got for FREE!!!)

this pie was absolutely wonderful and Jesse loved it!!! two thumbs up for this one!
